Vendakka Pachadi is a quick and important recipe for Onam sadhya or at any Kerala Sadhya (Grand feast). Vendakka Pachadi recipe is also a healthy side dish and can be prepared quickly without much ingredients. Pachadi is made from different vegetables like ash gourd, cucumber, pineapple, lady’s finger or beetroot.
The traditional Vendakka Pachadi uses deep fried okra/ lady’s finger with blended coconut and tempering. Vendakka is a good source of Vitamin B, K, Â Potassium, etc. So do include it in your daily diet. This is usually served with hot steamed rice and thoran. Here is the traditional recipe to make it.

This is a healthy and tasty side dish and can be included for everyday weekday meals, where its taste will be sure to steal your heart! So let's get started.
Get all the ingredients ready needed for the recipe. Wash and clean the lady's finger and pat dry in a paper towel to remove excess water.
Chop the lady's finger into thin round slices. Then heat oil in a pan or kadai and add the chopped lady's finger.
Keep stirring them in medium flame. Add a little salt to it. Fry the lady's finger until they turn crisp.
Next step is to grind the ingredients listed under *For Grinding into a fine paste by adding little water.
Once the coconut is grinded smoothly, add it to the whisked curd. Check for the salt and add it according to taste.
Finally add the fried lady's finger to the curd mix and stir thoroughly.
To enhance the flavor the final tempering is needed. Take all the ingredients listed under *For Tempering.
Heat coconut oil and add the mustard seeds. Once they splutter add the red chilies followed by curry leaves. Pour it into the pachadi and mix. Cover and set aside for some time.
